Keto Friendly Vanilla-Rose Matcha Chia Pudding Recipe

On my Keto journey, I have been playing around with creating new recipes to satisfy different taste sensations. This one is creamy. Sometimes all you want to do is sit on the sofa and relax with a bowl and a spoon. This recipe is perfect for those moments.

My Keto Friendly Vanilla-Rose Matcha Chia Pudding is creamy and has just enough texture for a little bit of chew. The match will give you extra energy and focus. The relaxing flavors of vanilla and rose will give you a sense of calmness. I love to eat this in the morning before I head out for my morning walk.  Try it and let me know what you think in the comments below.

Keto Friendly Vanilla-Rose Matcha Chia Pudding IngredientsFirst mix 2 tsps of culinary grade matcha and 3 1/2 cups of unsweetened vanilla coconut milk on low in a blender. Then pour over 2/3 cup of chia seed. Stir in 1/2 tbsp of rose water, 1 tbsp of avocado oil, and 4 drops of liquid stevia (optional).

After the ingredients are well mixed, store in the fridge overnight and enjoy. Letting it sit overnight will allow the chia to swell and be more gelatinous, adding to the creamy texture of this treat.

This recipe makes 8 cups. I consider a serving to be 1/2 cup. If I am eating it for a snack, I stick to the 1/2 a cup serving, but if I am eating it for a meal I will eat 1 cup.

1/2 cup yields 117 calories, 9.3 grams of fat, .5 grams of net carbs (5.3 grams of fiber), and 4.4 grams of protein. See complete nutrition info below.

If you don’t like the taste of stevia, it can be left out. Alternatively, you can try another keto friendly sugar substitute. You can also make variations to this recipe by adding a few berries or substituting unsweetened vanilla almond milk.
