Crock-Pot Cornish Game Hen with Summer Veggies – Recipe
When I was little I was notoriously a picky eater! Even when my parents tried to make me eat the food they prepared, I’d opt to go to bed hungry. I just didn’t care for much besides meat, bread, and sugar.
I actually learned to cook specifically so I could make food that I’d actually enjoy. However, I wasn’t exposed to many cooking methods or a wide variety of foods as a child so my palette was limited for a long time.
One of the most exciting things about my wellness journey has been learning to eat the rainbow. I’ve had such a great time exploring new taste and techniques. Cooking has become my way to explore the culinary traditions of the world while building a better body.
One of the best ways to get exposed to a wide variety of the seasonal crops is to shop at a local farmers market. I actually subscribe to my areas local share service so every week a get a surprise bag of nature’s goodies.
Tonight, I using my weekly share to give my Cornish Game Hen some flare.

Did you know that cooking tomatoes with olive oil helps release the lycopene for absorption?
*You can actually use any veggies you want but the one listed are what I used.
- One Cornish Game Hen
- 1/2 white onion
- 1 garlic bulb
- 2 small cabbages
- 2 heirloom tomatoes
- 1 green bell pepper
Put one Cornish Game Hen into the slow cooker with 1 cup of water. Next, add one cup of sprouted lentils. Load up with spices.
I specifically added the sprouted lentils to the mix to increase the heartiness of each dish.
I also added a handful of baby potatoes for the same reason but only about 8 because I still want each serving to be low carb.
Then add your chopped and diced veggies. I prefer my veggies chopped and diced into pieces that aren’t too small because I want each one to stand out on the plate. Hearty bites of food to me are much more enjoyable and filling.
The last step is to pile everything into the slow cooker and forget it.
I set this to a 4 hour cook but you can definitely cook it slower for longer to get that fall off the bone effect.
You can eat well and hearty with what nature provides!
