Recipe – Vanilla Egg Yolk Cookies

I love having dessert after dinner. Thankfully, I can often make my own and save money buying store bought treats, not to mention the added preservatives and other unhealthy ingredients.

Although I normally enjoy baking, sometimes I want something quick and simple and don’t feel like a dealing with a multi step baking project.

Quick treats to the rescue! Vanilla egg yolk cookies are soooo good and easy to make. Unlike traditional cookies, egg yolk cookies are slightly cakey. To me, this recipe taste like Madelines from Starbucks.

Ingredients:

  • 1/2 cup unbleached flour
  • 1/3 cup sugar
  • 2 tbsp unsalted butter
  • 1 large egg yolk
  • 1 pinch sea salt
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract
  • Add a few drops of water if your mixture is dry.

Instructions:

You can mix all these ingredients in one medium sized bowl, just blend until mixture looks like cookie dough. The entire process takes only a few minutes.

Then, bake on a greased cookie sheet for about 10 minutes, or until golden, at 350 degrees. This small batch recipe makes 8 cookies.
