Diane’s Fig-tastic Sugar-Free Preserve Recipe: Sweetness Without Guilt
I’m so thankful that figs are so plentiful in North Carolina this time of year. Among my family members, I never run out. Today, I had a bit too much so I decided to make a small batch of fig preserve.
One thing about my cooking is that I prefer to use as much of the whole ingredient of whatever I’m working with as possible. This is for both improved nutrition and environmental sustainability.
In my fig preserve, I use the whole fig to get the added fiber. Plus, the skin adds to the thickening of the preserve. I also don’t use sugar because figs are plenty sweet on their own. As a matter of fact, I often use this preserve as a sweetener in other recipes. It’s particularly great in smoothies.
Figs are rich in vitamins, minerals, and antioxidants, offering many health benefits.
Recipe
- Prep Time: 5 minutes
- Cook Time: 30 minutes
- Total Time: 35 minutes

Ingredients
- 1/2 pound fresh figs (removed and dice)
- 1/4 cup water
- 1/2 tablespoons lemon juice
- 1/2 teaspoons vanilla extract
Instructions:
- Wash and dice the figs.
- Boil in water and lemon juice over medium head.
- Turn stove to low heat and stir frequently, mashing figs.
- When cooled store in fridge.
